"From Street Stall to Pop Up, From Pop Up To Permanent" When one brother lost his job and the other just about to finish University, The Dough Bros started their pizza revolution with an Italian wood fired oven in a street food truck back in the summer of 2013. Within a year of starting they opened a Pop Up Restaurant in Galway City Centre. Things went far better than expected, and they managed to stay their for almost 2 years, winning numerous awards along the way. When their short term lease ran out there, it was time to move to a bigger better location on Middle Street, which is now the Bros permanent home. As the McKenna guide said themselves " A Pizza Restaurant has never been so much fun, The Bros have created a new paradigm of how to set up a restaurant".
